I saw the blonding and had somewhat weak cup today for an Indie cafe. This is kinda like when Barista pull the shot for milk drinks and they let it go a bit longer. I suspect shorter shot will have a much better body, nicer crema (it was somewhat thin and light brown to dark blond) and overall improvement in taste.. Just my 2 cents. One of these days we will meet. There was only one blend available today... I thought you said there is a special blend. I could misunderstand it though. Milk drink is nice and I think most customer order milk based drink so this should work well. I think what barista did was similar to what was on the video.
