On the opposite end, I just attend a coffee workshop last night on drip. They roast the coffee lighter (full city), updose (28g per 300ml (10 oz)) and brew at a much lower temp for various drip, ie paper, cloth and Swissgold. It tastes more “tea like”, kinda bored to me but has layers of flavor, not as distinct as espresso.

On the bean, try to order as close to your place as possible as airfreight has unpredictable effect to the coffee. If in Michigan, I will still try ordering from Intelli. A bit further away is Social Coffee Company in Canada that was run by a Thai who came in 2nd in the latest SCAA’s roaster guild award (not the exact name). It’s a feat as he’s in business for only a couple of month and win this high caliber title vs. lots in the business for a long time. Sidamo I had was interesting.

ผมเคยดื่ม Christmas blend ของ Starbucks (มีคนให้มา)เขาคั่วเข้มแบบว่าเมล็ดกาแฟเบาหวิว และก็เหมือนจะไหม้แล้ว ผมไม่แน่ใจแต่เห็นว่าเมล็ดมันลอกออกเป็น layer ได้ คล้ายๆ กับเปลือกกระเทียม ผมว่ากลิ่นลักษณะนั้น น่าจะเป็นกลิ่นที่คุณวุฒิบอกว่า มันคงเป็นกลิ่นฉุนไปแล้ว

I gave the benefit of the doubt about the bean on the back of some color temperature. But since you said it’s burned, you should put something along sweetmarias’ line like fully carbonized or imminent fire in there.

Somehow, I agree with you on this one…
